Smoky Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 cans (15 oz each) Black beans
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 0.75 cup Gluten-free rolled oats
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 0.5 tsp Chili powder
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 2 large Sweet potatoes
  • 2 tbsp Olive oil
  • 4 each Gluten-free burger buns
  • 4 leaves Lettuce
  • 1 sliced Tomato

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Drain and rinse the 2 cans (15 oz each) of black beans. Place them in a large bowl and mash them with a fork or potato masher. You want some beans mashed and some left whole for texture.
  3. 3Finely chop the 0.5 cup of onion and mince the 2 cloves of garlic. Add the chopped onion and minced garlic to the bowl with the mashed black beans.
  4. 4Add the 0.75 cup of gluten-free rolled oats, 1 tsp of smoked paprika, 1 tsp of cumin, 0.5 tsp of chili powder, 0.75 tsp of salt, and 0.25 tsp of black pepper to the bowl. Mix everything together well until it is all combined.
  5. 5Divide the mixture into 4 equal portions and form them into patties. These are your black bean burger patties.
  6. 6Peel the 2 large sweet potatoes and cut them into fry shapes. Place the sweet potato fries on a baking sheet. Drizzle the 2 tbsp of olive oil over the fries and toss them to coat. Spread the fries out in a single layer.
  7. 7Place the baking sheet with the sweet potato fries into the preheated oven. Bake for 25-30 minutes, or until the fries are tender and crispy. Flip the fries halfway through the baking time. While the fries are baking, you can cook the black bean burgers.
  8. 8To cook the burgers, you can either pan-fry them in a lightly oiled skillet over medium heat for 5-7 minutes per side, until golden brown, or bake them on a separate parchment-lined baking sheet in the 400°F (200°C) oven for 20-25 minutes, flipping them halfway through, until they are heated through and firm.
  9. 9Assemble your burgers by placing a black bean burger on each of the 4 gluten-free burger buns. Top with 1 leaf of lettuce and 1 slice of tomato per burger. Serve the burgers with the crispy baked sweet potato fries.
