Ingredients

  • 1.5 lb Potatoes
  • 4 oz Smoked Salmon
  • 1/4 cup Red Onion
  • 2 tbsp Fresh Dill
  • 1/2 cup Mayonnaise
  • 2 tbsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Boil the potatoes until tender, about 15 minutes. Drain and let cool slightly.
  2. 2While the potatoes are cooling, dice the smoked salmon and red onion. Chop the fresh dill.
  3. 3In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, olive oil, salt, and pepper.
  4. 4Once the potatoes are cool enough to handle, dice them into bite-sized pieces.
  5. 5In a large bowl, combine the potatoes, smoked salmon, red onion, and dill.
  6. 6Pour the dressing over the potato salad and mix well.
  7. 7Refrigerate for at least 30 minutes before serving.
