Ingredients

  • 1 cup Dried chickpeas
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 1/4 cup Fresh parsley
  • 1/4 cup Fresh cilantro
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 cups Oil for frying
  • 1/4 cup Tahini
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic
  • 2-4 tablespoons Water

Instructions

  1. 1Soak chickpeas in water for at least 12 hours or overnight. Drain and rinse.
  2. 2In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, smoked paprika, baking powder, salt, and pepper. Blend until coarsely ground.
  3. 3Shape mixture into small patties or balls.
  4. 4Heat oil in a deep pot or fryer to 350°F (175°C). Fry falafel until golden brown and crispy, about 3-5 minutes.
  5. 5Whisk together tahini, lemon juice, garlic, and water for tahini sauce. Add water gradually until desired consistency is reached.
  6. 6Serve falafel with tahini sauce.
