Ingredients

  • 3 lbs Pork shoulder
  • 0.5 cup Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Green cabbage
  • 1 large Red apple
  • 0.5 cup Mayonnaise (egg-based)
  • 2 tablespoons Apple cider vinegar (for slaw)
  • 1 tablespoon Sugar (for slaw)

Instructions

  1. 1In a small bowl, combine apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. 2Place pork shoulder in a slow cooker and pour the spice mixture over it, ensuring it's well coated.
  3. 3Cook on low for 8 hours or on high for 4 hours, or until pork is very tender and easily shredded.
  4. 4While the pork is cooking, prepare the apple slaw: thinly shred the green cabbage and dice the red apple.
  5. 5In a separate bowl, whisk together mayonnaise, apple cider vinegar (for slaw), and sugar.
  6. 6Pour the dressing over the cabbage and apple mixture, and toss to combine. Refrigerate until ready to serve.
