Slow Cooker Mujadara (Lentils and Rice)

Ingredients

  • 1 cup Brown Lentils
  • 1 cup Rice
  • 2 large Onions
  • 3 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 4 cups Water

Instructions

  1. 1Rinse the 1 cup of brown lentils and the 1 cup of rice under cold running water until the water runs clear. Drain them well.
  2. 2Thinly slice the 2 large onions. Heat the 3 tablespoons of olive oil in a 10-inch skillet over medium heat (350°F / 175°C). Add the sliced onions and cook, stirring frequently, for 20 to 25 minutes, or until they are golden brown and caramelized. They should smell sweet and look deeply browned.
  3. 3Place the rinsed 1 cup of brown lentils, the rinsed 1 cup of rice, the caramelized onions from the skillet, the 1 teaspoon of cumin, the 1 teaspoon of salt, and the 0.5 teaspoon of black pepper into your slow cooker.
  4. 4Add the 4 cups of water to the slow cooker.
  5. 5Cover the slow cooker with its lid. Cook on the low setting for 3 to 4 hours, or until the lentils and rice are tender and have absorbed most of the water. The mixture should be soft and fragrant.
  6. 6Serve the mujadara hot.
