Slow Cooker Gluten-Free Barbacoa Beef

Ingredients

  • 3 lbs Beef chuck roast
  • 1 large Onion
  • 4 cloves Garlic
  • 3 Chipotle peppers in adobo sauce
  • 0.25 cup Apple cider vinegar
  • 2 tbsp Lime juice
  • 1 cup Beef broth
  • 2 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Place beef chuck roast in a slow cooker.
  2. 2In a blender, combine onion, garlic, chipotle peppers, apple cider vinegar, lime juice, beef broth, cumin, oregano, salt, and pepper. Blend until smooth.
  3. 3Pour the sauce over the beef. Cook on low for 8 hours or on high for 4 hours, or until the beef is very tender and easily shreds.
  4. 4Shred the beef with two forks. Serve in tacos, burritos, or bowls.
