Ingredients

  • 1.5 lbs Pork Shoulder
  • 2 tbsp Tamarind Paste
  • 8 cups Water
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 medium Eggplant
  • 1 cup Green Beans
  • 2 cups Spinach
  • 2 tbsp Fish Sauce

Instructions

  1. 1In a large pot, combine pork shoulder, water, onion, and tomatoes. Bring to a boil and then simmer for 45 minutes, or until pork is tender.
  2. 2Add tamarind paste and fish sauce. Simmer for another 10 minutes.
  3. 3Add eggplant and green beans. Cook for 5 minutes.
  4. 4Stir in spinach just before serving. Serve hot.
