Sinigang (Sour Soup) with Pork (Soy-Free)

Ingredients

  • 1 lb Pork Belly
  • 8 cups Water
  • 2 tbsp Tamarind Paste
  • 1 Onion
  • 2 Tomato
  • 1 cup Long Green Beans
  • 1 cup Radish
  • 1 cup Taro Root
  • 2 cups Spinach
  • 1 tbsp Fish Sauce

Instructions

  1. 1In a large pot, combine pork belly and water. Bring to a boil, then reduce heat and simmer for 45 minutes, or until pork is tender.
  2. 2Add onion and tomato to the pot. Simmer for another 10 minutes.
  3. 3Stir in tamarind paste and fish sauce.
  4. 4Add long green beans, radish, and taro root. Cook until vegetables are tender.
  5. 5Stir in spinach just before serving.
  6. 6Serve hot.
