Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 1 package Tamarind soup base (gluten-free)
  • 6 cups Water
  • 4 oz Rice noodles
  • 5 oz Spinach
  • 1 medium Eggplant
  • 1 cup Okra
  • 1 medium Onion
  • 1 tbsp Fish sauce (optional)

Instructions

  1. 1In a large pot, bring water to a boil.
  2. 2Add tamarind soup base and stir until dissolved.
  3. 3Add onion, eggplant, and okra. Simmer for 10 minutes.
  4. 4Add shrimp and cook until pink, about 3-5 minutes.
  5. 5Add rice noodles and cook until tender, about 3 minutes.
  6. 6Stir in spinach and fish sauce (if using). Cook until spinach is wilted.
  7. 7Serve hot.
