Sinigang na Hipon (Shrimp in Sour Broth)

Ingredients

  • 1 lb Shrimp
  • 8 cups Water
  • 2 tbsp Tamarind powder
  • 1 medium Onion
  • 2 medium Tomato
  • 1 cup Okra
  • 2 cups Spinach
  • 1/2 cup Green beans
  • 1 tbsp Fish sauce

Instructions

  1. 1In a large pot, bring the 8 cups of water to a rolling boil over high heat, about 5-10 minutes.
  2. 2Add the 1 medium onion and 2 medium tomatoes to the boiling water. Reduce the heat to medium-low, cover the pot, and simmer for 5 minutes, until the onion is slightly softened.
  3. 3Stir in the 2 tablespoons of tamarind powder and the 1 tablespoon of fish sauce until the tamarind powder is dissolved. Continue to simmer for another 5 minutes.
  4. 4Add the 1 lb shrimp, 1 cup okra, and 1/2 cup green beans to the pot. Cook over medium heat for 3-5 minutes, or until the shrimp turn opaque pink and are cooked through (internal temperature of 145°F or 63°C), and the okra and green beans are tender-crisp.
  5. 5Stir in the 2 cups of spinach and cook for 1 minute, or until the spinach is just wilted.
  6. 6Serve the Sinigang na Hipon hot.
