Ingredients

  • 1.5 lbs Pork belly (or shrimp)
  • 8 cups Water
  • 1 package Tamarind soup base
  • 1 large Onion
  • 2 large Tomatoes
  • 1 bunch Kangkong (water spinach)
  • 1 cup String beans
  • 4 Radish
  • 1 medium Eggplant
  • 2 tbsp Fish sauce

Instructions

  1. 1In a large pot, bring water to a boil.
  2. 2Add pork belly (or shrimp), onion, and tomatoes. Simmer for 30 minutes or until the pork is tender.
  3. 3Stir in the tamarind soup base and fish sauce.
  4. 4Add radish, eggplant, and string beans. Cook for another 5 minutes.
  5. 5Add kangkong (water spinach) and cook until wilted.
  6. 6Serve hot with rice.
