Singkong Goreng (Fried Cassava)

Cassava root, boiled until tender and then fried to a golden crisp. A simple and satisfying Indonesian snack.

Ingredients

  • 1 lb Cassava root
  • 6 cups Water, for boiling
  • 1/2 tsp Salt
  • 1 cup Vegetable oil, for frying

Instructions

  1. 1Peel the 1 lb Cassava root and cut it into 2-inch pieces.
  2. 2Place the cassava pieces in a large heavy-bottomed pot and cover them with 6 cups Water. Add the 1/2 tsp Salt.
  3. 3Bring the water to a rolling boil over high heat. Cook the cassava for 15-20 minutes, or until a fork can easily pierce the pieces.
  4. 4Carefully drain the cooked cassava in a colander and let it cool slightly for about 5 minutes. This prevents the cassava from breaking apart when frying.
  5. 5Pour the 1 cup Vegetable oil into a 10-inch skillet and heat it over medium heat until it shimmers, about 350°F (175°C).
  6. 6Carefully add the drained cassava pieces to the hot oil, ensuring not to overcrowd the skillet. Fry for 5-8 minutes, turning occasionally, until the cassava is golden brown and crispy on all sides.
  7. 7Use a slotted spoon to remove the fried cassava from the skillet and place it on a plate lined with paper towels to absorb any excess oil. Serve the Singkong Goreng warm.
