Sinangag (Garlic Fried Rice)

Classic Filipino garlic fried rice, naturally dairy-free. Perfect as a side dish for any Filipino breakfast.

Ingredients

  • 4 cups Cooked rice (day-old)
  • 8 cloves Garlic
  • 3 tbsp Coconut oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 stalks Green onions

Instructions

  1. 1Prepare the garlic: Peel and finely mince all 8 cloves of garlic. Slice the 2 stalks of green onions thinly.
  2. 2Heat the oil: Place a large pan or wok over medium-high heat. Add the 3 tablespoons of coconut oil and heat until it shimmers, about 1 minute. This is approximately 375°F (190°C).
  3. 3Toast the garlic: Add the minced garlic to the hot coconut oil. Cook, stirring frequently, for 1 to 2 minutes, until the garlic is golden brown and fragrant. Watch carefully to prevent it from burning, which will make it taste bitter.
  4. 4Add the rice: Add the 4 cups of cooked rice (day-old) to the pan with the garlic and oil. Use a spatula to break apart any clumps of rice.
  5. 5Fry the rice: Stir-fry the rice with the garlic and oil for 5 to 7 minutes, until the rice is heated through and evenly coated with the fragrant garlic. Season the rice with the 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, stirring to distribute.
  6. 6Serve: Transfer the garlic fried rice to a serving dish. Garnish with the sliced green onions before serving.
