Ingredients

  • 8 pieces Injera (dairy-free, egg-free)
  • 4 medium Tomato
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 tablespoons Berbere Spice Blend
  • 2 tablespoons Vegetable Oil
  • 2 medium Avocado
  • 1/2 teaspoon Salt
  • 1/2 cup Water

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place a 30.48 cm skillet over medium heat (176.7°C / 175°C). Add the 2 tablespoons of vegetable oil.
  2. 2Add the 1 medium chopped onion to the skillet. Cook, stirring occasionally, until the onion is softened and looks translucent, about 5 minutes.
  3. 3Add the 4 cloves of minced garlic and the 2 tablespoons of Berbere Spice Blend to the skillet. Cook, stirring constantly, until the garlic and spices are fragrant, about 1 minute. Be careful not to burn the spices.
  4. 4Add the 4 medium diced tomatoes and the 1/2 cup of water to the skillet. Stir everything together. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it simmer gently for 20 minutes, or until the tomatoes have broken down and the sauce has thickened. Stir occasionally to prevent sticking.
  5. 5Stir the 1/2 teaspoon of salt into the tomato sauce. Taste the sauce and add more salt if needed.
  6. 6To serve, arrange the 8 pieces of injera on a serving platter or individual plates. Spoon the warm tomato sauce over the injera. Slice the 2 medium avocados and arrange the slices on top of the sauce.
  7. 7Serve the Sils (Tomato Sauce) with Injera and Avocado immediately while it is warm.
