Ingredients

  • 1 cup Pearl Barley
  • 6 cups Water
  • 1 medium Red Onion
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 tbsp Berbere Spice Blend
  • 0.5 tsp Turmeric Powder
  • 2 tbsp Coconut Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 1 tbsp Lemon Juice

Instructions

  1. 1Rinse the pearl barley thoroughly under cold water.
  2. 2In a large pot, sauté the finely chopped red onion in coconut oil over medium heat until softened (about 5 minutes).
  3. 3Add minced garlic and ginger to the pot and cook for another minute until fragrant.
  4. 4Stir in the berbere spice blend and turmeric powder, cooking for 1 minute to bloom the spices.
  5. 5Add the rinsed pearl barley and water to the pot. Bring to a boil, then reduce the heat to low.
  6. 6Cover the pot and simmer for 45 minutes to 1 hour, or until the barley is tender and the soup has thickened.
  7. 7Season the soup with salt and black pepper to taste. Stir in the lemon juice before serving.
  8. 8Serve hot.
