Ingredients

  • 1 lb Shrimp
  • 8 oz Rice noodles
  • 1 cup Broccoli florets
  • 1 cup Carrots
  • 1 cup Bell peppers
  • 1 cup Snow peas
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1/4 cup Tamari (gluten-free)
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 1 tablespoon Vegetable oil

Instructions

  1. 1Bring a large pot of water to a rolling boil. Add the 8 oz of rice noodles and cook for 3-5 minutes, or until they are tender but still have a slight chew. Drain the cooked rice noodles in a colander and rinse them with cold water to prevent sticking, then set them aside.
  2. 2Place a large 12-inch skillet or wok over medium-high heat, which is approximately 375°F (190°C). Add the 1 tablespoon of vegetable oil to the skillet and let it heat for 1-2 minutes until it shimmers slightly.
  3. 3Add the 2 cloves of minced garlic and 1 teaspoon of grated ginger to the hot oil in the skillet. Stir constantly with a spatula or wooden spoon for 30 seconds, until you can clearly smell their fragrant aroma.
  4. 4Add the 1 lb of shrimp to the skillet in a single layer. Cook the shrimp for 2-3 minutes per side, until they turn opaque pink and reach an internal temperature of 145°F (63°C) when measured with a food thermometer. Remove the cooked shrimp from the skillet and set them aside in a bowl.
  5. 5Add the 1 cup of broccoli florets, 1 cup of carrots (sliced into thin rounds or matchsticks), 1 cup of bell peppers (sliced into thin strips), and 1 cup of snow peas to the skillet. Stir-fry these vegetables for 4-5 minutes, tossing them frequently, until they are tender-crisp.
  6. 6Return the cooked 1 lb of shrimp to the skillet with the vegetables. Add the cooked 8 oz of rice noodles to the skillet as well.
  7. 7In a small bowl, whisk together the 1/4 cup of tamari, 1 tablespoon of rice vinegar, and 1 teaspoon of sesame oil until fully combined. Pour this sauce evenly over the shrimp, vegetables, and noodles in the skillet. Gently toss all the ingredients together for 1-2 minutes, ensuring everything is well coated with the sauce and heated through.
  8. 8Serve the Shrimp Stir-Fry with Rice Noodles immediately while hot.
