Ingredients

  • 1 pound Shrimp
  • 4 medium Zucchini
  • 3 tablespoons Olive oil
  • 4 cloves Garlic
  • 1/4 cup Dry white wine
  • 2 tablespoons Lemon juice
  • 1/4 teaspoon Red pepper flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Fresh parsley

Instructions

  1. 1Peel and devein the shrimp.
  2. 2Use a spiralizer to make zucchini noodles.
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Add minced garlic and red pepper flakes to the skillet and cook for 1 minute, until fragrant.
  5. 5Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  6. 6Pour in white wine and lemon juice and cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  7. 7Add the zucchini noodles to the skillet and toss to coat. Cook for 2-3 minutes, until the zucchini noodles are tender-crisp.
  8. 8Season with salt and pepper.
  9. 9Serve immediately, garnished with fresh parsley.
