Shrimp Fried Rice (Soy-Free)

A classic shrimp fried rice recipe made without soy sauce by using coconut aminos. The addition of scrambled eggs adds protein and richness.

Ingredients

  • 4 cups Cooked rice
  • 1 lb Shrimp
  • 2 Egg
  • 1 cup Frozen peas and carrots
  • 1/2 Onion
  • 2 cloves Garlic
  • 1/4 cup Coconut aminos
  • 2 tbsp Sesame oil
  • 2 Green onions

Instructions

  1. 1Heat sesame oil in a large skillet or wok over medium-high heat.
  2. 2Add the chopped onion and minced garlic and cook until softened, about 2-3 minutes.
  3. 3Add the shrimp and cook until pink and cooked through, about 3-5 minutes. Remove the shrimp from the skillet and set aside.
  4. 4Whisk the eggs and pour into the skillet. Scramble until cooked through. Break into smaller pieces.
  5. 5Add the cooked rice and frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes.
  6. 6Add the coconut aminos and stir to coat the rice and vegetables.
  7. 7Return the shrimp and scrambled eggs to the skillet and stir to combine.
  8. 8Garnish with sliced green onions and serve immediately.
