Ingredients

  • 1 cup Stone-Ground Grits
  • 3 cups Water
  • 1/2 cup Milk or Cream
  • 1/2 cup Sharp Cheddar Cheese
  • 2 tablespoons Butter
  • 8 oz Andouille Sausage
  • 1 lb Shrimp (peeled and deveined)
  • 1/2 cup Green Bell Pepper
  • 1/2 cup Red Bell Pepper
  • 1/2 cup Onion
  • 2 cloves Garlic
  • 1 tablespoon Cajun Seasoning
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Bring water to a boil in a medium saucepan. Gradually whisk in grits, reduce heat to low, and simmer for 20-25 minutes, stirring occasionally, until grits are tender and creamy.
  2. 2Stir in milk or cream, cheddar cheese, and butter until melted and smooth. Season with salt and pepper.
  3. 3While grits are cooking, heat olive oil in a large skillet over medium heat.
  4. 4Add sliced Andouille sausage and cook until browned.
  5. 5Add diced bell peppers, onion, and garlic to the skillet and cook until softened, about 5 minutes.
  6. 6Add shrimp and Cajun seasoning to the skillet and cook until shrimp are pink and cooked through, about 3-5 minutes.
  7. 7Serve shrimp and sausage mixture over creamy grits.
