Shito (Ghanaian Pepper Sauce)

A spicy Ghanaian pepper sauce made with dried fish, shrimp powder, ginger, garlic, and various spices, all cooked in oil until rich and flavorful. Dairy and nut-free.

Ingredients

  • 1 cup Vegetable Oil
  • 1/2 cup Dried Fish
  • 1/4 cup Shrimp Powder
  • 2 medium Onion
  • 2 tbsp Ginger
  • 4 cloves Garlic
  • 4-6 small Scotch Bonnet Peppers
  • 2 medium Tomatoes
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper
  • 1/2 tsp Anise Seed

Instructions

  1. 1Heat the vegetable oil in a saucepan over medium heat.
  2. 2Add the finely chopped onions and cook until golden brown and caramelized, about 15-20 minutes.
  3. 3Add the grated ginger and minced garlic. Cook for another 2-3 minutes until fragrant.
  4. 4Add the ground dried fish and shrimp powder. Stir well and cook for 5 minutes.
  5. 5Add the finely chopped Scotch bonnet peppers and the pureed tomatoes. Stir and cook for another 10 minutes.
  6. 6Season with salt, black pepper, and anise seed. Simmer on low heat for about 30 minutes, stirring occasionally, until the sauce thickens and darkens in color.
  7. 7Remove from heat and let cool completely before storing in an airtight container. Store in the refrigerator.
