Shish Tawook (Chicken Skewers)

Ingredients

  • 1.5 lbs Chicken breasts
  • 1/2 cup Plain yogurt
  • 1/4 cup Lemon juice
  • 3 cloves Garlic
  • 1 tsp Paprika
  • 1/2 tsp Turmeric
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Cut the 1.5 lbs of chicken breasts into 1-inch cubes.
  2. 2In a large bowl, combine the 1/2 cup of plain yogurt, 1/4 cup of lemon juice, 3 cloves of minced garlic, 1 tsp of paprika, 1/2 tsp of turmeric, 2 tbsp of olive oil, 1/2 tsp of salt, and 1/4 tsp of black pepper. Stir until everything is well mixed.
  3. 3Add the 1.5 lbs of chicken cubes to the bowl with the yogurt mixture. Stir to coat all the chicken pieces. Cover the bowl and refrigerate for at least 2 hours, or up to overnight, to let the chicken marinate.
  4. 4Thread the marinated chicken cubes onto skewers, leaving a small space between each piece.
  5. 5Preheat your grill to medium heat. If using a charcoal grill, aim for coals that are glowing with a light ash coating. If using a gas grill, set the temperature to approximately 375-400°F (190-200°C).
  6. 6Place the skewers on the preheated grill. Cook for 12-15 minutes, turning the skewers occasionally, until the chicken is golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  7. 7Remove the skewers from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chicken moist.
