Ingredients

  • 1 cup Chickpea Flour
  • 1.5 cups Water
  • 2 tablespoons Berbere Spice Mix
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 2 tablespoons Niter Kibbeh (Spiced Clarified Butter)
  • 0.5 teaspoon Salt
  • 1 cup Teff Flour
  • 2 tablespoons Olive Oil

Instructions

  1. 1In a saucepan, whisk together chickpea flour and water until smooth. Add berbere spice mix, chopped onion, and minced garlic.
  2. 2Cook over medium heat, stirring constantly, until the mixture thickens to a stew-like consistency (about 20-25 minutes).
  3. 3Stir in niter kibbeh and salt. Simmer for another 5 minutes, then remove from heat.
  4. 4Preheat oven to 350°F (175°C).
  5. 5In a bowl, mix teff flour and olive oil with a pinch of salt and water to form a dough.
  6. 6Roll out the dough thinly between two sheets of parchment paper.
  7. 7Cut the dough into small triangles or squares.
  8. 8Place the chips on a baking sheet and bake for 10-15 minutes, or until crispy and golden brown.
  9. 9Serve the warm shiro wot as a dip with the teff chips.
