Ingredients

  • 1 cup Chickpea Flour
  • 2 cups Water
  • 0.5 medium Red Onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Berbere Spice Blend
  • 2 tablespoons Niter Kibbeh (Spiced Clarified Butter)
  • 1 tablespoon Tomato Paste
  • 0.5 teaspoon Salt

Instructions

  1. 1In a pot, sauté the finely chopped red onion in niter kibbeh until softened.
  2. 2Add minced garlic, ginger, and berbere spice blend. Cook for 1 minute.
  3. 3Stir in tomato paste and cook for another minute.
  4. 4Gradually whisk in the chickpea flour and water to avoid lumps.
  5. 5Bring to a simmer and cook for 20-25 minutes, stirring occasionally, until the stew has thickened to your desired consistency.
  6. 6Season with salt to taste. Serve hot.
