Shiro Wat (Chickpea Stew)

Ingredients

  • 1 cup Chickpea flour
  • 2 cups Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Berbere spice blend
  • 2 tablespoons Niter Kibbeh substitute (vegan)
  • 1 teaspoon Salt

Instructions

  1. 1Sauté finely chopped onion, garlic, and ginger in Niter Kibbeh substitute until softened.
  2. 2Add berbere spice blend and cook for 1 minute, stirring constantly.
  3. 3Gradually whisk in chickpea flour to avoid lumps. Then, slowly add water, stirring continuously to create a smooth mixture.
  4. 4Bring to a simmer and cook for 20-25 minutes, stirring occasionally, until the stew thickens to your desired consistency.
  5. 5Season with salt to taste. Serve hot with injera.
