Shiro Wat (Chickpea Flour Stew) with Barley

Ingredients

  • 1 cup Chickpea flour
  • 3 cups Water
  • 1 medium Onion
  • 2 cloves Garlic
  • 1/2 inch Ginger
  • 1 tbsp Berbere spice blend
  • 1 tbsp Tomato paste
  • 2 tbsp Vegetable oil
  • 2 cups Cooked barley

Instructions

  1. 1Dice the onion and mince the garlic and ginger.
  2. 2Heat the vegetable oil in a pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. 3Add the garlic, ginger, and Berbere spice blend. Cook for 1 minute, stirring constantly.
  4. 4Stir in the tomato paste and cook for another minute.
  5. 5Gradually whisk in the chickpea flour to avoid lumps. Then add the water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the stew has thickened.
  6. 6Serve hot with cooked barley.
