Ingredients

  • 1.5 lb Ground lamb
  • 2 lb Sweet potatoes, peeled and cubed
  • 1 Onion, chopped
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, minced
  • 1 cup Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce (dairy-free)
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Dairy-free butter
  • 0.5 cup Unsweetened almond milk

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Place the 2 lb sweet potatoes, peeled and cubed, into a pot and cover with water. Bring to a boil over high heat and cook for 15-20 minutes, or until the sweet potatoes are easily pierced with a fork. Drain the sweet potatoes thoroughly. Mash them in a bowl with the 2 tbsp dairy-free butter, 0.5 cup unsweetened almond milk, 1 tsp salt, and 0.5 tsp black pepper until smooth and creamy. Set this sweet potato mash aside.
  3. 3Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 1.5 lb ground lamb and cook, breaking it apart with a spoon, until it is browned all over. This should take about 5-7 minutes.
  4. 4Add the 1 onion (chopped), 2 carrots (chopped), and 2 stalks celery (chopped) to the skillet with the lamb. Cook, stirring occasionally, for 5 minutes, or until the vegetables begin to soften.
  5. 5Add the 3 cloves garlic (minced) to the skillet and cook for 1 minute more, until fragrant.
  6. 6Stir in the 2 tbsp tomato paste and 1 tbsp Worcestershire sauce. Cook for 1 minute, stirring constantly.
  7. 7Pour in the 1 cup vegetable broth. Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly. Taste the lamb mixture and add more salt and pepper if needed.
  8. 8Transfer the lamb and vegetable mixture from the skillet into a baking dish. Carefully spread the prepared sweet potato mash evenly over the top of the lamb mixture.
  9. 9Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the sweet potato topping is lightly golden brown and the filling is bubbling around the edges.
  10. 10Allow the shepherd's pie to cool for a few minutes before serving. This helps the filling set.
