Ingredients

  • 1 lb Ground Lamb
  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 2 large Sweet Potatoes
  • 2 tbsp Butter
  • 1/4 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Heat the 2 tablespoons of olive oil in a large 12-inch skillet over medium heat. Add the 1 lb of ground lamb and cook, breaking it apart with a spoon, until it is browned all over, about 5-7 minutes.
  3. 3Add the 1 medium chopped onion, 2 medium chopped carrots, and 2 chopped celery stalks to the skillet with the lamb. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
  4. 4Stir in the 2 cloves of minced garlic and the 2 tablespoons of tomato paste. Cook for 1 minute more, stirring constantly, until the garlic is fragrant.
  5. 5Pour in the 1 cup of beef broth and the 1 tablespoon of Worcestershire sauce. Add the 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Bring the mixture to a simmer, then reduce the heat to low and cook for 15 minutes, stirring occasionally, until the sauce has thickened slightly.
  6. 6While the meat mixture is simmering, peel the 2 large sweet potatoes and cut them into 1-inch pieces. Place the sweet potato pieces in a medium pot and cover them with cold water. Bring the water to a boil over high heat and cook until the sweet potatoes are tender when pierced with a fork, about 15-20 minutes.
  7. 7Drain the cooked sweet potatoes well. Return them to the empty pot and add the 2 tablespoons of butter and the 1/4 cup of milk. Mash the sweet potatoes with a potato masher or a fork until they are smooth and creamy.
  8. 8Pour the thickened meat mixture from the skillet into a 9x13 inch baking dish. Carefully spread the mashed sweet potato topping evenly over the meat mixture in the baking dish.
  9. 9Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the sweet potato topping is lightly golden brown in spots and the meat filling is bubbling around the edges.
