Ingredients

  • 2 cups Glutinous Rice
  • 2 cans Coconut Milk
  • 3 leaves Pandan Leaves
  • 0.5 tsp Salt
  • 0.5 cup All-Purpose Flour
  • 1 cup Sugar
  • 3 pieces Eggs
  • 2 drops Green Food Coloring

Instructions

  1. 1Rinse glutinous rice and soak for at least 4 hours or overnight.
  2. 2Drain rice and steam with coconut milk, pandan leaves, and salt until cooked through.
  3. 3Press rice firmly into a baking dish.
  4. 4Whisk together flour, sugar, eggs, and coconut milk for the custard layer.
  5. 5Strain the custard mixture. Add green food coloring.
  6. 6Pour custard over the rice layer. Steam or bake until the custard is set.
  7. 7Let cool completely before cutting into squares and serving.
