Ingredients

  • 1 cup Rice Flour
  • 1 can Coconut Milk
  • 1/4 cup All-Purpose Flour
  • 1/4 cup Sugar
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Baking Powder

Instructions

  1. 1In a bowl, combine rice flour, all-purpose flour, sugar, salt and baking powder.
  2. 2Gradually add coconut milk while stirring until the batter is smooth.
  3. 3Add vanilla extract and stir well.
  4. 4Heat a small non-stick skillet or pancake pan over low heat.
  5. 5Pour a small amount of batter into the skillet (about 1/4 cup per pancake).
  6. 6Cook until bubbles appear on the surface and the bottom is lightly golden, about 3-4 minutes.
  7. 7Gently flip and cook for another 1-2 minutes until cooked through.
  8. 8Repeat with the remaining batter. Serve warm.
