Serabi Solo (Coconut Pancakes)

Ingredients

  • 1 cup Rice Flour
  • 1.5 cups Coconut Milk Alternative (e.g. Oat Milk)
  • 0.5 cup All-Purpose Flour
  • 2 tbsp Sugar
  • 0.25 tsp Salt
  • 1 tsp Baking Powder
  • 0.5 tsp Vanilla Extract
  • 1 tbsp Vegetable Oil

Instructions

  1. 1In a large mixing bowl, combine 1 cup of rice flour, 0.5 cup of all-purpose flour, 2 tbsp of sugar, 0.25 tsp of salt, and 1 tsp of baking powder.
  2. 2Gradually whisk in 1.5 cups of coconut milk alternative until you have a smooth batter with no lumps.
  3. 3Stir in the 0.5 tsp of vanilla extract until fully incorporated.
  4. 4Heat a lightly oiled griddle or frying pan over medium heat, about 350°F (175°C).
  5. 5Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. 6Cook each pancake for 2-3 minutes per side, until the edges look set and the bottom is golden brown.
  7. 7Flip the pancakes and cook the other side for another 2-3 minutes until golden brown and cooked through.
  8. 8Remove the pancakes from the griddle and serve warm.
