Serabi Solo (Coconut Pancakes)

Traditional Indonesian coconut milk pancakes from Solo, naturally gluten-free when made with rice flour. Sweet and fragrant.

Ingredients

  • 1 cup Rice Flour
  • 2 cups Coconut Milk
  • 0.5 cup Sugar
  • 0.25 teaspoon Salt
  • 1 teaspoon Pandan Extract (optional)
  • 0.25 cup Chocolate Sprinkles or Sliced Banana (optional toppings)

Instructions

  1. 1In a bowl, whisk together rice flour, coconut milk, sugar, and salt until smooth.
  2. 2Add pandan extract, if using.
  3. 3Heat a lightly oiled griddle or non-stick pan over medium heat.
  4. 4Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  5. 5Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. 6Serve warm with your choice of toppings, such as chocolate sprinkles or sliced banana.
