Senegalese Vegetable Curry (Dairy-Free)

Ingredients

  • 2 tbsp Coconut oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 medium Red bell pepper
  • 1 medium Sweet potato
  • 2 cups Cauliflower florets
  • 2 cups Spinach
  • 1 can Coconut milk
  • 1 cup Vegetable broth
  • 2 tbsp Curry powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 cups Cooked quinoa

Instructions

  1. 1Heat coconut oil in a large pot or wok over medium heat. Add onion, garlic, and ginger and cook until fragrant.
  2. 2Add red bell pepper and sweet potato and cook for 5 minutes.
  3. 3Add cauliflower florets and cook for another 5 minutes.
  4. 4Stir in coconut milk, vegetable broth, curry powder, turmeric, cumin, salt, and pepper. Bring to a simmer.
  5. 5Add spinach and cook until wilted.
  6. 6Serve hot over cooked quinoa.
