Ingredients

  • 1 lb Smoked turkey
  • 1 lb Okra
  • 1 medium Onion
  • 2 medium Tomato
  • 6 cups Chicken broth
  • 2 tbsp Tomato paste
  • 2 tbsp Vegetable oil
  • 1 tsp Thyme
  • 1 Bay leaf
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Cut smoked turkey into bite-sized pieces. Wash and chop okra. Chop onion and tomato.
  2. 2Heat vegetable oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3Stir in tomato paste and cook for 1 minute more.
  4. 4Add smoked turkey, okra, tomato, chicken broth, thyme, bay leaf, salt, and pepper.
  5. 5Bring to a boil, then reduce heat, cover, and simmer for 35-40 minutes, or until okra is tender and soup has thickened.
  6. 6Remove bay leaf before serving. Adjust seasoning to taste.
