Ingredients

  • 1.5 cups Red lentils
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 14.5 oz can Diced tomatoes
  • 6 cups Vegetable broth
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Ginger
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Lemon juice

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. 2Add minced garlic and cook for 1 minute.
  3. 3Stir in the lentils, diced tomatoes, vegetable broth, turmeric, cumin, coriander, ginger, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  4. 4Stir in lemon juice before serving. Serve hot.
