Ingredients

  • 2 medium Sweet potatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Tomato paste
  • 1/2 cup Peanut butter
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes
  • 1/4 Scotch bonnet pepper
  • 1 tbsp Vegetable oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Peel and dice sweet potatoes. Chop onion and garlic.
  2. 2Heat vegetable oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. 3Stir in tomato paste and cook for 1 minute more.
  4. 4Add sweet potatoes, peanut butter, vegetable broth, diced tomatoes, Scotch bonnet pepper, salt, and pepper.
  5. 5Bring to a boil, then reduce heat, cover, and simmer for 35-40 minutes, or until sweet potatoes are tender.
  6. 6Remove Scotch bonnet pepper before serving. Adjust seasoning to taste.
