Senegalese Peanut Butter Oatmeal

Ingredients

  • 2 cups Rolled oats
  • 4 cups Water
  • 1/2 cup Peanut butter
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt
  • 2 tbsp Maple syrup
  • 1/4 cup Toasted peanuts

Instructions

  1. 1In a large heavy-bottomed pot, bring the 4 cups of water to a rolling boil over high heat (212°F / 100°C).
  2. 2Once boiling, add the 2 cups of rolled oats to the pot. Reduce the heat to low, cover the pot, and let it simmer for 5 minutes, or until the oats have absorbed most of the water and are tender.
  3. 3Uncover the pot and stir in the 1/2 cup of peanut butter, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt until everything is well combined and the peanut butter has melted into the oats.
  4. 4Continue to cook the oatmeal over low heat for another 2 minutes, stirring constantly, until it has thickened to your desired consistency.
  5. 5Remove the pot from the heat and stir in the 2 tablespoons of maple syrup.
  6. 6Divide the oatmeal evenly among 4 bowls. Top each serving with the 1/4 cup of toasted peanuts.
