- 2Heat the 2 tbsp vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, approximately 375°F (190°C). Add the seasoned beef and brown it on all sides, about 5-7 minutes total. Remove the beef from the pot and set it aside on a plate.
- 3Add the chopped 1 large onion and the 2 medium carrots to the same pot. Cook, stirring occasionally, until they begin to soften, about 5-8 minutes. Add the 3 cloves minced garlic, 1 tbsp grated ginger, and 1/4 scotch bonnet pepper. Cook for 1 minute more, stirring constantly, until fragrant.
