Senegalese Lentil Soup (Souloukhou)

Ingredients

  • 1.5 cups Red lentils
  • 1 large Onion
  • 2 medium Carrot
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 can Diced tomatoes
  • 6 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1/2 tsp Coriander
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Lemon juice

Instructions

  1. 1Rinse the lentils under cold water.
  2. 2Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrots, and celery until softened.
  3. 3Add minced garlic, cumin, turmeric, and coriander. Cook for 1 minute, stirring constantly.
  4. 4Add diced tomatoes, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  5. 5Season with salt and pepper. Stir in lemon juice before serving.
