Ingredients

  • 1 cup Dried Black-Eyed Peas
  • 1/2 small Onion
  • 1/4 pepper Scotch Bonnet Pepper
  • 1 teaspoon Salt
  • 2 cups Vegetable Oil

Instructions

  1. 1Soak the black-eyed peas in water for at least 4 hours, or preferably overnight.
  2. 2Drain the peas and rinse them thoroughly.
  3. 3In a food processor, combine the soaked black-eyed peas, onion, Scotch bonnet pepper (use sparingly, or omit for no heat), and salt.
  4. 4Process until the mixture forms a smooth paste. Add a little water if needed to help it blend.
  5. 5Heat vegetable oil in a deep fryer or large skillet over medium-high heat.
  6. 6Drop spoonfuls of the black-eyed pea mixture into the hot oil.
  7. 7Fry for about 3-4 minutes per side, or until golden brown and crispy.
  8. 8Remove the fritters from the oil and drain them on paper towels. Serve warm.
