Senegalese Bissap (Hibiscus Tea) with Ginger and Mint

Ingredients

  • 1 cup Dried Hibiscus Flowers
  • 6 cups Water
  • 2 inch piece (sliced) Fresh Ginger
  • 1/4 cup Fresh Mint Leaves
  • 1/4 cup Sugar
  • 2 tablespoons Lime Juice

Instructions

  1. 1Rinse the dried hibiscus flowers.
  2. 2In a large pot, combine hibiscus flowers, water, and sliced ginger. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. 3Remove from heat and stir in sugar and fresh mint leaves. Let steep for 5 minutes.
  4. 4Strain the tea through a fine-mesh sieve or cheesecloth to remove the flowers and ginger.
  5. 5Stir in lime juice. Let cool completely before serving over ice. Garnish with mint sprigs or lime slices, if desired.
