Sekuwa (Grilled Meat Skewers)

Ingredients

  • 1 lb Lamb
  • 2 tbsp Ginger-garlic paste
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 0.5 tsp Garam masala
  • 2 tbsp Yogurt (dairy-free option available)
  • 1 tbsp Mustard oil
  • 1 tbsp Lemon juice
  • 8 pieces Skewers (metal or bamboo)
  • 2 tbsp Cilantro

Instructions

  1. 1In a bowl, combine the 2 tbsp ginger-garlic paste, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp coriander powder, 0.5 tsp garam masala, 2 tbsp yogurt, 1 tbsp mustard oil, and 1 tbsp lemon juice.
  2. 2Add the 1 lb lamb cubes to the bowl with the marinade and mix everything together thoroughly to ensure all the lamb pieces are coated.
  3. 3Cover the bowl and let the lamb marinate in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to develop.
  4. 4Thread the marinated lamb pieces onto the 8 skewers, distributing them evenly.
  5. 5Preheat your grill to medium-high heat, which is about 400-450°F (200-230°C).
  6. 6Place the skewers on the preheated grill and cook for 10-12 minutes. Turn the skewers occasionally to ensure all sides of the lamb are cooked and develop a slight char.
  7. 7The lamb is cooked through when it reaches an internal temperature of 145°F (63°C) or is no longer pink inside. Remove the skewers from the grill.
  8. 8Garnish the sekuwa with 2 tbsp cilantro and serve hot.
