Ingredients

  • 3 large Red Onions
  • 0.75 cup Sugar
  • 1 teaspoon Chili Flakes
  • 1 stick Cinnamon Stick
  • 2 pods Cardamom Pods
  • 2 tablespoons Vinegar
  • 0.5 teaspoon Salt
  • 8 slices Bread Slices
  • 2 tablespoons Butter

Instructions

  1. 1Thinly slice the 3 large red onions.
  2. 2In a large (e.g., 10-inch or 12-inch) skillet, combine the thinly sliced 3 large red onions, 0.75 cup sugar, 1 teaspoon chili flakes, 1 stick cinnamon stick, 2 pods cardamom pods, 2 tablespoons vinegar, and 0.5 teaspoon salt.
  3. 3Place the skillet over medium heat, approximately 300-350°F (150-175°C). Cook the mixture, stirring occasionally, for 20 to 25 minutes, until the onions are deeply caramelized, very soft, and the mixture has thickened to a jam-like consistency.
  4. 4While the seeni sambol cools slightly, toast the 8 slices of bread slices in a toaster or under a broiler until golden brown and crisp.
  5. 5Spread the 2 tablespoons of butter evenly over the toasted 8 slices of bread. Top each slice with a generous amount of the prepared seeni sambol. Serve immediately.
