- 1Cut the 2 lbs of beef chuck into 1-inch cubes. Place the beef cubes in a bowl and season them with the 1 tsp of salt and 0.5 tsp of black pepper. Toss to coat evenly.
- 2Heat the 2 tbsp of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, about 400°F (200°C). Once the oil is shimmering, carefully add the seasoned beef cubes in batches, making sure not to overcrowd the pot. Brown the beef on all sides until it has a nice crust, about 3-4 minutes per batch. Use tongs to remove the browned beef from the pot and set it aside on a plate.
