Scottish Tattie Scones (Egg-Free)

Traditional Scottish potato scones, cooked on a griddle. This version uses applesauce for binding to replace egg.

Ingredients

  • 500 g Mashed potatoes, cold
  • 125 g All-purpose flour
  • 60 ml Applesauce, unsweetened
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Butter substitute

Instructions

  1. 1In a large bowl, combine the 500 g of cold mashed potatoes, 125 g of all-purpose flour, 1 teaspoon of baking powder, and 0.5 teaspoon of salt.
  2. 2Add the 60 ml of applesauce to the bowl and mix everything together with your hands or a spoon until a soft dough forms.
  3. 3Turn the dough out onto a clean surface that has been lightly dusted with a little of the all-purpose flour. Gently knead the dough for about 1 minute until it is smooth.
  4. 4Roll out the dough with a rolling pin until it is about 1/4 inch thick. Use a round cookie cutter or a knife to cut the dough into circles.
  5. 5Place a griddle or a large skillet over medium heat. Add the 2 tablespoons of butter substitute to the hot surface and spread it around to grease the griddle.
  6. 6Carefully place the dough circles onto the greased griddle. Cook for 4-5 minutes on the first side, until the bottom is golden brown. Flip the scones and cook for another 4-5 minutes on the second side, until they are also golden brown and cooked through.
  7. 7Remove the tattie scones from the griddle and serve them warm.
