Ingredients

  • 2 cups All-Purpose Flour
  • 3/4 cup Hot Water
  • 1/4 cup Cold Water
  • 1/4 cup Vegetable Oil
  • 1 cup Scallions
  • 1 teaspoon Salt
  • 1 teaspoon Sesame Oil

Instructions

  1. 1In a large bowl, combine flour and hot water. Mix with chopsticks until a shaggy dough forms. Add cold water and knead until a smooth dough forms. Cover and let rest for at least 30 minutes.
  2. 2Divide the dough into 4 equal pieces. Roll each piece into a thin oval, about 8-10 inches long.
  3. 3Brush each oval with vegetable oil, sprinkle with salt and chopped scallions. Roll up tightly like a jelly roll.
  4. 4Coil the roll into a spiral shape, tucking the end underneath. Flatten the spiral into a circle about 6 inches in diameter.
  5. 5Heat a lightly oiled skillet over medium heat. Cook each pancake for 3-4 minutes per side, or until golden brown and crispy. Serve hot, drizzled with a little sesame oil.
