Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Boiling Water
  • 1/2 cup Cold Water
  • 1 cup Scallions
  • 1/4 cup Vegetable Oil
  • 1 teaspoon Salt
  • 1/4 teaspoon White Pepper

Instructions

  1. 1In a large bowl, combine the 2 cups of All-Purpose Flour with the 1 cup of Boiling Water. Stir with a spoon until a shaggy dough forms. This will be sticky.
  2. 2Add the 1/2 cup of Cold Water to the bowl. Continue mixing and then knead the dough in the bowl for about 5 minutes, or until it becomes smooth and elastic. Cover the bowl with a lid or plastic wrap and let the dough rest for 30 minutes at room temperature.
  3. 3Lightly dust a clean surface with a little flour. Divide the rested dough into 4 equal portions. Take one portion and roll it out into a thin circle, about 8-10 inches in diameter.
  4. 4Brush the surface of the rolled-out dough circle evenly with about 1 tablespoon of the 1/4 cup Vegetable Oil. Sprinkle this evenly with 1/4 teaspoon Salt, a pinch of the 1/4 teaspoon White Pepper, and about 1/4 cup of the 1 cup Scallions, which should be finely chopped.
  5. 5Starting from one edge, tightly roll the oiled and sprinkled dough circle into a long, thin log. Once you have a log, carefully coil it into a flat spiral shape. Gently press down on the coiled dough to flatten it into a pancake, about 1/2-inch thick. Repeat steps 3-5 with the remaining 3 portions of dough.
  6. 6Heat a 10-inch non-stick skillet over medium heat. Add about 1 tablespoon of the remaining 1/4 cup Vegetable Oil to the skillet. Once the oil is shimmering, carefully place one flattened pancake into the skillet. Cook for 3 to 4 minutes per side, until the pancake is golden brown and crispy on both sides. You should hear a gentle sizzle as it cooks.
  7. 7Remove the cooked pancake from the skillet and place it on a plate. Repeat step 6 with the remaining 3 pancakes, adding more oil to the skillet as needed, about 1 tablespoon per pancake. Ensure the skillet is medium heat and cook each pancake for 3 to 4 minutes per side until golden brown and crispy.
