Ingredients

  • 2 cups All-Purpose Flour
  • 3/4 cup Hot Water
  • 1/4 cup Cold Water
  • 1/4 cup Vegetable Oil
  • 1 tbsp Sesame Oil
  • 1 bunch Scallions
  • 1/2 tsp Salt

Instructions

  1. 1In a large bowl, combine the 2 cups of All-Purpose Flour and the 3/4 cup of Hot Water. Stir with a spoon or spatula until a shaggy dough forms, meaning it's just starting to come together.
  2. 2Add the 1/4 cup of Cold Water to the bowl and knead the dough directly in the bowl or on a clean surface for 5 to 7 minutes, until it becomes smooth and elastic. Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 30 minutes. This resting period helps the gluten relax, making the dough easier to work with.
  3. 3While the dough is resting, prepare the scallions: wash and finely chop the 1 bunch of Scallions. Set aside.
  4. 4After the dough has rested, divide it into 4 equal portions. On a lightly floured surface, roll each portion into a thin circle, about 8-10 inches in diameter.
  5. 5Lightly brush each circle with about 1 tablespoon of the 1/4 cup Vegetable Oil. Sprinkle evenly with the 1/2 teaspoon Salt and the chopped scallions.
  6. 6Starting from one edge, tightly roll up each oiled and scallioned circle into a log. Once you have a log, coil it into a flat spiral shape, tucking the end underneath. Gently flatten the spiral into a pancake about 6-8 inches wide using a rolling pin.
  7. 7Heat 1 tablespoon of the 1 tbsp Sesame Oil in a large skillet (about 10-12 inches) over medium heat. Once the oil is shimmering, carefully place one flattened pancake into the skillet.
  8. 8Cook the pancake for 3 to 4 minutes per side, until it is golden brown and crispy. You should see beautiful golden-brown spots and hear a gentle sizzle. Repeat with the remaining 3 pancakes, adding a little more sesame oil if needed between batches.
