Sayur Lodeh (Vegetable Stew in Coconut Milk)

Ingredients

  • 1 cup Water
  • 2 cans Coconut Milk
  • 1 cup Long Beans, cut into 2-inch pieces
  • 1 cup Cabbage, shredded
  • 1 cup Carrots, sliced
  • 1 cup Eggplant, cubed
  • 1 cup Green Beans, trimmed
  • 1 medium Onion, sliced
  • 3 cloves Garlic, minced
  • 2 slices Galangal, sliced
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 0.5 tsp Chili Paste (Sambal Oelek)
  • 1 tsp Salt
  • 1 tsp Palm Sugar

Instructions

  1. 1In a large pot, bring water to a boil.
  2. 2Add galangal, sliced onion, and minced garlic.
  3. 3Add turmeric powder, coriander powder, and chili paste (if using).
  4. 4Pour in coconut milk and bring to a simmer, stirring constantly to prevent curdling.
  5. 5Add the vegetables (long beans, cabbage, carrots, eggplant, green beans) to the pot.
  6. 6Season with salt and palm sugar.
  7. 7Simmer until the vegetables are tender, about 20-25 minutes.
  8. 8Serve hot with rice or on its own.
