Savory Tofu Pudding (Douhua)

Ingredients

  • 1 block Silken Tofu
  • 2 tablespoons Light Soy Sauce
  • 1 teaspoon Black Vinegar
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Chili Oil
  • 2 tablespoons Pickled Mustard Greens (Zha Cai), chopped
  • 2 tablespoons Dried Radish (Cai Po), chopped
  • 1 tablespoon Chopped Green Onions

Instructions

  1. 1Carefully unpackage the 1 block of silken tofu and place it into a heatproof dish. Set the dish in a steamer basket over a pot of water that has been brought to a gentle simmer (around 180-200°F / 82-93°C). Cover the steamer and warm the tofu for 3 to 5 minutes, until it is warm throughout but not bubbling.
  2. 2While the tofu warms, in a small bowl, combine the 2 tablespoons of light soy sauce, 1 teaspoon of black vinegar, 1 teaspoon of sesame oil, and 1 teaspoon of chili oil. Stir these ingredients together until well mixed to create the savory sauce.
  3. 3Once the 1 block of silken tofu is warm, use a large, flat spoon or spatula to gently scoop portions of the warm tofu into two individual serving bowls.
  4. 4Evenly drizzle the savory sauce over the tofu in each serving bowl. Then, divide and sprinkle the 2 tablespoons of chopped pickled mustard greens, 2 tablespoons of chopped dried radish, and 1 tablespoon of chopped green onions over the tofu in both bowls.
  5. 5Serve the Savory Tofu Pudding immediately while it is still warm.
