Ingredients

  • 2 cups Rolled Oats
  • 4 cups Coconut Milk
  • 1 cup Shiitake Mushrooms, sliced
  • 2 cups Spinach
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1In a medium saucepan, combine rolled oats and coconut milk.
  2. 2Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally, until the oatmeal is creamy and thickened.
  3. 3While the oatmeal is cooking, heat sesame oil in a separate skillet over medium heat.
  4. 4Add minced garlic and grated ginger and cook for 30 seconds until fragrant.
  5. 5Add sliced shiitake mushrooms and cook until softened, about 5 minutes.
  6. 6Add spinach and cook until wilted, about 2 minutes.
  7. 7Stir the mushroom and spinach mixture into the oatmeal.
  8. 8Season with soy sauce, salt, and black pepper to taste.
  9. 9Serve hot.
